This Dubai eatery has a unique way of minimising food waste

The UAE’s ever-expanding creative community often kick back at KOA Canvas’ ultra-cool restaurant Lowe, and now there’s an even greater reason to visit the creative hotspot. Lowe is championing sustainability with the fifth edition of the Waste Not event, in which they minimise food waste by jazzing up food scraps to create a repurposed menu. Stay with us.

Carefully crafted by Lowe’s Jesse Blake and Kate Christou, the menu is created with leftovers that would have otherwise gone to waste and is described as an experimental dining approach. You don’t say.

The menu features dishes like cauliflower stem soup and clementine and grapefruit cordial with cracked salt. The event is only happening once and has limited seating, so you better get booking if you want to give it a try.
